225g butter (room temp)
115g icing sugar (sifted)
2 egg yolks
340g plain flour
55g ground hazelnuts
Preheat oven to 180C
Cream together butter and icing sugar until pale and fluffy.
Beat in egg yolks.
In separate bowl, sift flour and mix in hazelnuts.
Bring all ingredients together to form into a dough.
Shape dough into a “sausage”; roll in ~10 layers of cling film (nice and tight), twist edges to seal.
Place in fridge to firm up.
Cutting ~3/4 inch slices from roll, place on baking tray.
Bake ~20 minutes or until pale golden.
Sprinkle with caster sugar (and cinnamon?) while warm.
